I always used to say - I will never make mashed potatoes from scratch - what a colossal waste of time!
WRONG - the last time I bought refrigerated mashed potatoes, the were not edible - they were icky and grainy and gross. I decided right then and there that I would make my own. Aside from the fact that I need a new peeler (I am thinking Pampered Chef, of course) it was not bad - even Ron liked them (he is the pickiest eater on EARTH). They were fluffy and yummy and CHEAP!! Hello!!!! SO very cheap - and made so many - we will have potato pancakes with supper tonight we had that many left!
My aunt used to tell me all the time I was crazy to buy mashed potatoes already made. I used to think the was crazy to bother to make them. I was wrong. She was right. If you love mashed potatoes like I do - it is definitely worth the effort!

Refrigerated Mashed Potatoes:
5 lbs. potatoes, pared and quartered
6 oz. cream cheese
1 cup sour cream
2 tsp. onion salt
1 tsp. salt
1/4 tsp. pepper
2 TBSP. butter
Cook potatoes in boiling salted water until tender. Drain well. Mash until smooth.
Add cream cheese, sour cream, onion salt, salt, pepper, & butter. Beat with mixer until smooth & fluffy.
Place into a greased casserole, dot with butter, and bake at 350 for 30 min.
They are called refrigerated potataoes because you can store them in the fridge up to 2 weeks before baking them. :)
These are AWESOME...... we can't eat them any other way!!!!

I make good Mash - never bought ready-made mashed potato and I consider myself to be a lazy cook!
So that makes me what, exactly? Pathetic? LOL...
Real taters always taste better than boxed. And I do kind of like the lumps too! My mom rarely if ever made mashed potatoes from a box.
I don't actually make them from a box, Abe - they were the kind you buy refrigerated. But no more! From now on it is all homemade mashed potatoes for me!
